outdoor kitchen island with sink and top-secret vault. But while the food is good, it's not up to snuff! We got a bit more in-depth about the island of New Mexico after we spent a week there. We were introduced to the island's new owner last week, the owner, the owner's daughter-in-law, and their friend Josh. One of her favorite foods on the island is the green-skinned macaroni and cheese on the island. He called it a "tortilla." The recipe is very simple:

1 small can peeled and diced tomatoes,

1 medium yellow bell pepper,

1 medium red bell pepper,

1 cup sugar

1 tablespoon olive oil,

2 cloves garlic, chopped (white or orange)

4 ounces cooked or cooked red and green pepper,

1/2 cup granulated sugar

2 teaspoons kosher salt

1 1/2 cups grated shredded tomato, finely chopped

1/2 cup unsweetened shredded cheese, to taste

1 cup canned tomato paste

1/2 tablespoon brown sugar

Add the cilantro, onion, parsley, lime zest, and 1 medium yellow onion and cook on low for about 10 minutes before serving. The green pepper will soak up any excess juices and serve on top. If it doesn't taste too good, add a third quart of water to an 8-quart can
