I have a huge passion for cooking but I have been missing out on many amazing things in my life. My favorite is the amazing Baked Chorizo (and a really great appetizer…). This recipe can serve two different kinds – those with a great sauce and those that are just a little sweet but still perfectly seasoned (so it's fine). We have cooked together this chili recipe and it worked great! I made a big batch ahead of time and made 3 batches at dinner. And I think I can always eat this without being hungry or hungry!

1 1/2 pounds boneless chicken breasts

2 tablespoons vegetable oil, divided

1/4 cup dry white sauce *

1 tablespoon red pepper flakes

4 cloves garlic, minced

1/4 teaspoon chili powder

3/4 cup chopped cilantro

Salt and pepper to taste

2 cups cooked butchered mozzarella cheese, or a very sweet salsa if using

1 tablespoon white wine vinegar

Sticky, all purpose flour spray

8 large eggs or your favourite, or 4 1/2 cups shredded mozzarella (I used whole, and chopped up)

2 cups chiles, chopped

1/4-1/2 cups water

3/4 cup extra virgin olive oil

2 cups tomato paste or other vegetarian substitutes

3 quarts shredded mozz
